Menu Monday

Here's what we'll be eating this week...

Mon: Chicken Pesto Sandwich


I love pesto and I also love chicken salad. There's no way this can go wrong....except if the store doesn't have pesto......and all that basil that you froze looks nasty now. I'm thinking this is going to turn into regular chicken salad (which is still delicious).

Tues: Spaghetti Squash Lasagna


This could be an epic fail as well. The grocery store didn't have spaghetti squash either (I really need to start paying attention to these things) so this will be regular lasagna. Luckily I had half of a box of regular lasagna noodles hanging around in the pantry.

Wed: Easy Mexican Style Bake


This is one of the few things this week that I actually have all of the ingredients for. I've made something similar in the past and it was okay - pretty much just a regular casserole. I'm planning on spicing this one up a lot with lots of hot sauce and chili powder.

Thurs: Curried Broccoli and Cous Cous


I'm most excited about this one. I really like cooked broccoli (where it's still slightly crispy) and I also really like curry. I couldn't find chick peas in the grocery store, so I'll be substituting black beans. I hope it works.

Bonus Time!

The weather was gross here yesterday (and will be for the next few days) so I made some deer chili (no recipe just threw stuff together) last night. I also wanted to make some cookies to eat with my hot chocolate. I didn't have any chocolate chips, so oatmeal raisin was the next best thing.

Random Facts

So here's a little bit about me...

1. Why did you start blogging?

I mainly started because I was creeping on other people's and it felt weird sometimes. I started one mostly so I could comment, but then I thought "if random person can write about what she ate for dinner, so can I!".

2. Why did you choose this name for your blog?

My last name is Brown (and it had recently become so when I started this blog) and I grew up on a farm. It was fun and it rhymed.

3. If money were no object, where would you live and why?

I genuinely really like where we live. We live in Western NC. It's pretty, the weather is nice (most of the time) and both mine and KB's families are here. That being said, I wouldn't mind having some vacation properties in South America, a lodge in Montana or Canada and in Europe. A girl can dream right?

4. When you meet someone for the first time, what's the first thing you want to know about him/her?

I like to know where someone is from and where they grew up. I get asked this a lot at work because I'm one of the few people that has a Southern accent. It tells you a lot about somebody by knowing where they grew up.

5. What's the most unique thing about you?

Ummmm I don't really feel like I have that many unique things. I have really long toes (like really long). Some of them are as long as my fingers. It's kind of gross.

6. What inspires you?

Right now I'm trying to get fit, so I'm inspired by a lot of weight loss blogs and Pins. It's really motivated me so far to go online and see people who have lost a lot more weight than I want to (or need to).

7. What's your favorite dish (to eat or prepare)?

My favorite dish to each (but definitely not prepare) is country ham. It's so salty (and really bad for you) and so good. I don't eat it that often, but on a biscuit it is seriously heaven.

8. Describe your ideal weekend.

My ideal weekend sounds a lot like the one coming up. I'm going to stay at home and get my yard ready for winter by cleaning out some flower beds and moving some plants inside. I'm going to make some really good deer stew and probably some bread. On Sunday it's supposed to be cold, so we'll probably just stay inside and lay around all day. We've been gone the last few weekends, so this one will be great.

9. What did you want to be when you grew up and how does it compare to what you do now?

For a long time I really wanted to be a veterinarian I really liked animals and I thought it would be super neat.  When I got older and wiser I realized that you had to know a lot of science and chemistry and I was just too lazy for that. Now I work in marketing for large pharmaceutical companies. It's definitely not what I saw myself doing for the rest of my life, but for now it's pretty fun and I've learned a lot about that industry.

10. What is your dream career?

I honestly have no idea. I'd really like to be able to stay at home and raise some goats and chickens and dogs. I'd like to have a big garden and just can stuff all day long and make good food. That's not really a job, but more of a lifestyle I guess

11. What is your favorite song or who is your favorite artist to dance to?

One of my favorite songs is "Wild Horses" by the Rolling Stones. The words and music are really pretty. It's not a really good song to dance to though. For dancing, I move it a lot to 80s hair metal. I love me some hair bands.

I'm terrible at nominating people for things, so I'm going to be lazy and tag anyone that wants to say a lil something about themselves.

Menu Monday

It's a pretty boring week recipe wise around the Brown household.  We weren't home on Saturday when I normally grocery shop, so I just ran to Wal-Mart to get a few things to get us by.

Mon: Buffalo Chicken Pizza Rolls


I was going to make this last week, but I got busy and didn't make dinner one night. I did finally pick up some pizza dough so at least I can actually follow the recipe and not make some biscuit hybrid of it.

Tues: Fish Packets with Veggies


We made some fish in our fire pit the other weekend (it was actually really good) so I have some fish leftover. There isn't really a recipe for this, the picture explains it all. It's super easy and we ate it a lot this summer.

Wed: Broccoli Alfredo


The recipe is for chicken broccoli alfredo, but ours will have just broccoli in it. Last week I really wanted Italian food, but didn't have the stuff to make it. This week I was determined to make something cheesy and Italian-y. I also have a bunch of random bits of leftover pasta that I need to use up. This should more likely be called broccoli alfredo....penne....spaghetti....rotini.

Thurs: Freezer food

No matter how much we eat, I still seem to always have a full freezer. I'm not complaining, but sometimes it get's to be a lot. Hopefully KB will shoot a deer over Thanksgiving and we'll need even more freezer room.

Bonus!

Chicken Fried Steak


This recipe is actually for chicken fried chicken, but I used steak. I also made some mashed potatoes, biscuits and white gravy. KB ate all of it and then some because he normally only gets that type of food at my grandma's or his mom's house. Don't get used to it!

Currently...


Listening...to some weird alternative music from the local radio station.

Eating...Nothing now because I just ate a TON of really good pizza for lunch.

Drinking...Peppermint tea.....because of said ton of pizza.

Wearing.....a black long sleeve dress, black and grey wedges, and a silver hoop necklace. I've been told that I look dressed up by 5 different people today. I just threw stuff on...oh well.

Feeling... Sleepy. I ate a ton of pizza and got to bed late last night.

Weather.....bright and sunny, but windy and chilly

Needing... to wash my hair. I didn't have time to wash it this morning so it's feeling a little greasy.

Wanting....to get my wedding ring back! It's getting fixed and has been for over a week. Come on people.

Thinking....that I'd really like to get a big fake knock off Michael Kors chronograph tortoise shell watch. Or a knockoff David Yurman bracelet.

Enjoying....being able to leave work a little early and get a good workout in. I was out last night and didn't get to workout.

Recent Reads

I've read some good (and some not so good) books lately.

Every now and then I get in a kick where I want to read cheesy romance novels and only cheesy romance novels.  Part of the thrill is reading the good parts out loud to anyone that will listen. Normally it's KB....or my coworkers....or my grandma.


This one was just as cheesy as it looked. Basically poor guy loves rich girl, he goes away to build up his fortune and returns to her, but (gasp) as someone else. They do it a lot and she realizes that it's really him because she recognizes his body (ow ow!). There's some drama with an old boyfriend and they end up happily ever after. I read this in about 2 days.



This one was pretty cheesy too. Bad girl hooks up with bad guy, but their love is so good. They end up saving each other from themselves and go off to be married and have lots of babies. La te dah.


Least favorite one of these. Seriously, why do all of these have to end with people having kids to be happy.



This one was probably my favorite. Not a lot of feelings, just a lot of feeling (hardee har har).

After all those romance books though, sometimes you need some substance.


This book was okay. It moved kinda slow, but the story was pretty good. It was told from multiple view points, so that helped to move it along a little bit. It's really long, so definitely have some time on your hands before reading.


This book was okay. It's a pretty short read and a lot of what he says makes sense. I'm all for his style of "vegan before dinner" and cutting down on meat. He also doesn't bash milk too bad (which is always refreshing for this type of book). It's also got some pretty good recipes in it.

Menu Monday

It was a busy weekend around the Brown household (post to come), but I still got some menu planning done.

Here's what we'll be eating this week...

Mon: French Onion Pasta



I love all things French Onion. The soup is awesome. I made a casserole that was really good. The grilled cheese version is super good. It's all amazing. I'm sure the pasta version will be too. I'm going to double the amount of onions used, because I love carmelized onions.

Tues: Orchard Turkey Burgers



I got a ton of comments on this pin from my Pinteresting Wednesday post, so I decided to try it out. I really like turkey burgers (probably better than beef burgers). They are lighter and most of the time a lot more flavorful (to me). KB is of course a fan of the red meat, but he's going to deal. I also got some really good apple cheddar cheese for these. I'm not a huge brie fan, but I thought the apple cheddar would go pretty good as well. We're going to have them with a side of vegetable chips.

Wed: Buffalo Chicken Pizza Rolls



I love all things buffalo chicken (as well as French Onion, but probably not together). I couldn't find pizza dough at the Aldi and I'm not crafty enough to make my own during the week, so I'm going to substitute biscuit dough. I'm planning on making little biscuit pockets with the spicy chicken inside of them. There is a high potential for it to be a complete disaster.....but at least a buffalo chicken flavored one.

Thurs: Vietnamese Beef Soup


I've had this recipe pinned for a really long time, but just never thought to make it. It's supposed to be a little chilly here later this week, so I thought soup might be a good idea. This one is mostly just broth with some noodles and shredded roast beef in it. I really like pho, so I think this is supposed to be an Americanized version of it. It looks really simple. I'll probably cook it in the crock pot so KB can have it when he gets home. I'm going to be at some party with my parents on Thursday night. Fun times.

Bonus Time:

Spicy Apple Butter



This is cooking as we speak. I tried to make apple butter last year and it was a disaster. It burned in the crock pot (I didn't even know that was possible) and it took me a good 2 days t get it unstuck. I'm cooking this batch today with a little bit more water and on a much lower temperature. Hopefully when I get home I have delicious apple butter and not a burnt mess.

Currently....

I decided to do a little post ala Katie Perk.


Listening...SkyFall by Adele.  I love me some James Bond movies and songs.  This one sounds especially 60s esque.

Eating...a pear with a sharp cheddar cheese stick.  Perfection. 
Drinking...red antioxidant green tea with strawberries and hibiscus.  Fancy.
Wearing.....brown dress pants and flats, a white t shirt, blue pashmina and fun cameo necklace from the Shabby Apple.
Feeling... Confused.  My wedding ring broke in half and I lost some of the diamonds.  I'm trying to figure out whether to fix or it just start over.  I'm meeting with a jeweler later today.
Weather.....Chilly, but sunny.
Needing...a haircut.  I'm still trying to grow my hair out to be really long, but it's getting skanky looking.  I feel like I look like Trishelle from the Real World with black hair.
Wanting...to leave work now.  Mitt Romney is speaking right next door to our office.  I'm leaving at lunch, but I'm sure the crazies (on both sides) will be out in force by then.  I got stuck in traffic when Joe Biden was here last week for over an hour.  Seriously people, Asheville is one of the most liberal towns in the nation - I think we all know who's going to carry it.
Thinking....that my husband is very cute.  KB is such a super hottie.  I'm a very lucky lady.
Enjoying....that I'm going to get a lot of errands ran this afternoon before leaving work.  I have to stop by the library, the jeweler, the tax office and the post office.  Luckily I work downtown and can walk to all of these.

Currently Loving...

Here are some things that I'm loving right now....


This stuff is the bomb.com.  It doesn't burn at all so you can actually swish the entire minute that is recommended. It also tastes really good.




I'm rediscovering this. I hadn't had it in a while and the store was out of my regular green/white tea blend that I drink in the mornings. It's so orangey and delicious. I've been mixing it with honey and drinking it in the morning and at night. Last night I added some lime to it and it was even better.





Speaking of limes...I've been putting them in everything recently. I put them in my water, my tea, soups, anything I can think of. You can get a big bag of them at Aldi for 99 cents and it has seriously changed my life. Citrus is supposed to be really good to flush out the toxins, so by now my body should be thoroughly flushed.



Apples and cheese are my jam right now too. They are so good. I've also been eating lots of pears and cheese. It has to be a really sharp cheddar and a really crisp apple or pear for it be good though.


Lana Del Rey is my biggest girl crush right now. So pretty. So weird. It's an amazing combo. I wish I could look like her everyday (but with black hair) without people looking at me weird. So what if she can't really sing....she's still cool.
