Recipe Roundup

I'm trying to be better about actually taking pictures of all the recipes I make and reviewing them.

Hopefully I can keep it up!

Here's what we ate last week:

Buffalo Chicken Soup

 It was pretty good, but pretty spicy.  I couldn't eat a lot of it (which is a good thing), but what I did eat had a really good flavor (if you like buffalo things).  I made us some toast to go with it to soak up some of the hotness.  I took the leftovers for lunch the next day and they were even better.  It was also really easy and was ready in about half an hour.

Stuffed Mexican Peppers


These were also really easy and were vegetarian.  I try to only cook meat a few times a week, but sometimes it gets hard finding meals that are actually filling.  This had lots of beans in it, so it was pretty hardy.  I could only eat one at dinner (we also had a big salad).  We also ate these for lunch the next day and they were pretty good.  Excuse my ghetto stove.  It's terrible.  I want a nice new pretty one.

Spinach Egg Bake


I really like egg-y things like this.  They are so easy, you can put anything in them, and they almost always taste good.  The hardest part about this dish was wilting the spinach.  I think you could also use frozen and just drain out the water.  I ended up changing the recipe a bit because I didn't have any Parmesan cheese.  I just used mozzarella and it was fine.  This would also be good with some bacon bits or chunked ham in it.  Ours was just cheese and spinach, but you could definitely dress it up.

I didn't take pictures of the blueberry pancakes, but they actually turned out pretty good too (and I'm not a huge pancake fan).  Rosa really liked them...probably a little too much.

Menu Monday

Here's what we're noshing on this week...

Mon: Easy Chicken Bake (recipe in Pin)

I am making this now and it smells wonderful! This looks really easy and like it would taste really good. I cut the chicken called for in the recipe in half and doubled the veggies. I'm also using sweet potatoes instead of new potatoes. I had a bunch of sweet potatoes left over from last week, so hopefully they don't taste too weird with italian dressing on them.

Tues: Crock Pot Red Beans and Rice


I've made a similar recipe to this in the past and it was really good. I've been going to the Aldi because it's super cheap, but they don't always have all the ingredients I need. I'll be substituing canned beans instead of dried ones in this recipe. I'm planning on washing them a lot so they aren't super salty and cooking on the lowest setting all day.

Wed: Deer Steak with Roasted Cabbage Wedges


I had planned to make these cabbage wedges earlier, but never got around to it. They look really good and I really love cabbage. We're having them with some deer steak. Deer season started today here, so I'm thinking soon we'll need that room in the freezer.

Thurs: Freezer food

Because hopefully soon we'll need lots of freezer space, we're eating some freezer food.  We'll either be eating lentil soup or white beans and ham stew.  Either one will be delicious!

Around the Kitchen

I finally got a chance to do some random things around the kitchen this weekend.

My mom gave me a bunch of basil, so I froze it.  I looked around for a few different methods and ended up chopping it and freezing it.

So far it seems to be okay, but I haven't used it yet.

I also made some marinated cucumbers.  They are kinda like pickles, but not as pickled.  You just cut up a cucumber, add some dill and apple cider vinegar and water.


I 'burped' the cucumber first.  You cut off the end that the stem was attached to and then rub it in a circular motion.  All of this white gunk will come out and supposedly it makes the cucumber taste sweeter and you won't burp it up later.  I'm not sure if it's just subconscious or what, but KB's grandparents swear by it.

Weekend Happenings

We decided to get out a little bit this weekend and take the puppies for a little walk.

It was bright and sunny when we left, but shortly upon getting there it rained.....really hard....for a long time.  We went to Craggy Gardens on the Blue Ridge Parkway.  It wasn't too far from our house, but we had never been there before.  While it was raining we ate lunch and then after it stopped we went on a little walk with the puppies.

You should have been able to see lots of mountains beyond there, but since it rained all we saw was fog.


Eventually it cleared off and you could see some of the mountains.


Somebody got tired and needed some assistance.


Somebody else got tired too.


We walked for a few miles and then turned around because it started raining again.


There were lots of wildflowers in bloom while we were there and I saw this little guy.

Hopefully we'll go back when we can see a little bit more besides lazy pugs and fog.

Menu Monday

It's been another busy week here at the Brown household and this week will be just as busy.  Here's what we'll be eating this week:

Mon:  Buffalo Chicken Soup


I love buffalo flavored things. This soup looks amazing and it's also only supposed to take 30 minutes. I'm going to be subbing out some things (especially the green onions) so it's going to be a little different, but it should still be delicious.

Tues: Bean There Stuffed That Peppers


I used to not be a big stuffed pepper fan. I normally make them in the Crock Pot and they would get all mushy and nasty. The last time I made them though, I made them in the oven and they were cooked, but weren't mushy. These look like they have some Mexican flavors in them, so they will probably be muy delicioso.

Wed: Spinach and Mozzarella Egg Bake


Our neighbors have chickens, so we have lots of eggs now. I love eggs and I also love cheese and spinach. I've made similar things like this in the past and they were very good. I'll probably add in some goat cheese instead of so much mozzarella though.

Thurs: Blueberry Pancakes and Sausage


I'm not a huge pancake fan. They get mushy with syrup and just taste kinda gross. KB really likes pancakes, so since he's been working so hard on our retaining wall I'm planning on making them for him. I'm really terrible at making pancakes, so it may not be much of a treat.

I'm planning on trying to step up my game with my Menu Monday posts.  I want to try to post pictures of what I make throughout the week and what worked and what didn't.  Hopefully I can keep it up!
