Menu Monday

Here's what we'll be eating this week....

Mon: Portobello Mushroom Pizzas

I've been shopping at Aldi and their prices on portobello mushrooms are amazing. I've been looking for some ways to use them so when I saw this recipe I jumped on it. These are really pizzas, but more like little sauteed vegetable cups.

Tues: Baked Turkey Pesto Sandwich


I really like pesto, but KB is not much of a fan. Hopefully I can fool him with this recipe. I'm going to try to make my own bread for this, but I had an epic baking fail yesterday with the test run for this bread, so I'm not sure what I'll end up doing.

Wed: Tomato Tortellini Soup


I've made this tomato soup before, but I've never added the tortellini. It's supposed to be kind of chilly here all week, so this soup will be good. Hopefully we can eat the rest of my bread brick with it.

Thurs: Scrambled Egg Salad


I really like egg salad. I really like scrambled eggs. Hopefully I really like this sandwich. It looks like it would be a little weird, but a part of me thinks it's going to be awesome. Hopefully it's not too eggy and a weird texture.

Bonus Time!

Deer Stew



KB and his dad worked on a retaining wall in our garden all day on Saturday (this has been a month long process...cue eye roll). It was rainy and cold here on Saturday and I needed to clean out the freezer so I made this deer stew. I'm planning to do a more in depth post on this one since most people look at you really funny when you say you are planning on eating deer for dinner.


Crock Pot Bread


I tried to make this yesterday as a test run for the turkey sandwich bake. It was a huge fail. My bread always turns out to be like a brick instead of nice and fluffy. No matter what I do it's always this way.


Mexican Hot Chocolate


It was a really nasty day yesterday and KB had been outside working for most of it, so I decided to make him a little treat. I'm not a huge hot chocolate fan, but I love Mexican hot chocolate. It's a little spicy, not as sweet, and really good. I made this recipe and jazzed it up with a bit more chile and spices. It was so good.

  2. I do not have a good relationship with bread baking. I am so making that hot chocolate. YUM!! We have currently been eating deer Summer Sausage!!

  5. I have that pesto turkey sandwich pinned too I think...looks so good! You should try my 'King's Hawaiian' recipe, it is very easy and I have made it several times without trouble. Of course, since I moved, I've had terrible luck with yeast recipes. I'm not sure if it is my bread machine or what! Bummer...

  6. Why did I never think of a portobello pizza?! That's brilliant! So making those next week. Were they as yummy as they look? I've done something similar with eggplant as the base- that's good too if you find a big fat purple eggplant calling your name.
