Menu Monday

This week is a little lackluster as we've almost reached the end of our fridge. Yay!

Here's what we'll be eating this week.  Link up with Rachel to play along.

Monday: Turkey Wraps with chips



I haven't had a wrap like this in a while and they are really easy.  I also got the best kettle cooked chips.  I only let myself eat them every once in a while, but salt and pepper kettle chips are the best.

Tuesday: Paprika Spiced Pork Chops with greens


One of KB's favorite meals is pork chops so I decided to treat him.  I'm planning on making greens similar to those in the recipe, but not quite as fancy.  I love greens with apple cider vinegar and dried cranberries.  Yum yum.

Wednesday: Hot dogs and chips



By this point most of our dishes will be packed up and we'll be eating off of paper plates. What better thing to eat off of paper plates than hot dogs and chips. I personally love hot dogs and think they are the best. I once tried to eat 10 of them in one baseball game. Needless to say that didn't turn out too well, but I still love them.

Thursday: Something leftover or take out

It's a wild card!

Bonus Recipe: Blasamic Penne with Roasted Asparagus


I made this last night and it was amazing! It's also a lot easier than I thought it was going to be. If you like balsamic vinegar you'll really like this. You could also do it with pretty much any type of pasta or roasted vegetable.

Weekly Work It Out

Still working out, but mostly just running/walking with the dogs and moving furniture.  This week I did get around to this workout...

While it looks a little cheesy, it was actually really good.  I loved the 3 different workouts and they all got me really sweaty.  I felt a little sore the next day but not too sore and it felt like I got a pretty good workout in during just 30 minutes.  I actually did this most of the week since it had 3 different full length workouts.

This week I will be getting only 1 workout since we're moving (hopefully) next week.

I've done some Jackier Warner stuff before and loved it.  She really works you out in a short amount of time. It's got three 20 minute segments and from all the reviews on Netflix it will kick your ass.  I'm excited already!

Saturday Randoms

Here are some random things for Saturday.

I've been really craving chocolate oatmeal no bake cookies recently.  I'm not normally a huge fan of these and I can't even rememver the last time I had them.  I made them a few nights ago and they were amazing.  KB and I ate the whole pan in one sitting.  I made these chocolate overnight oats today.  Hopefully they'll be like a healthier version of no bake cookies.



Our home buying process is making me stress through the roof.  The bank still hasn't approved our loan and probably won't until April 3rd or 4th.  We are scheduled to close on the 29th.  The sellers will be out of town from the 30th to April 15th.  Great.  They gave us an extension on due diligence but not closing and we have to pay an extra $1000 in due diligence fees.  Our lease is also up on our current place at the end of March.  We're hoping that we can stay for one more week, but if we can't we'll be staying with KB's parents.....and driving over an hour to work every day.  I pretty much hate my life right now.  If this falls through we will be out over $5k and won't have anywhere to live.  Home buying sucks I highly DON'T recommend it!  No wonder that industry is in the toilet.  Everyone working in it is an idiot.

Due to my high levels of stress my diet has consisted of mainly junk.  Last night I ate oreos and milk for dinner.  In the past two days I've eaten a whole bag of these.  Don't judge they are delicious.


I've been reading a lot recently to try to take my mind off of all my issues.  I've read these so far.  They were okay. KB's mom gave me "The Shack" and "Kisser".  "The Shack" is pretty Jesus-y (maybe she's trying to tell me something) and "Kisser" is a really easy read.  I also read the Pioneer Woman's book.  I'm not a huge Pioneer Woman fan.  Growing up on a farm at lot of what she does is really unrealistic.  Let's face it - if you are a regular farmer's family without a blog empire you can't just stay at home and be wonderfully home schooled domestic.  Newsflash farming is not investment banking and Marlboro Man is not bringing home the bacon....or the steak....or whatever.


I went to my first thrift store today and loved it!  If we weren't semi homeless right now I would have totally bought a few things.  I found some Spode and Waterford for $2.  There was also this really awesome vintage couch for $100, but KB hated it and I'm not sure where we would put it in our new house.  I'm now on the hunt for creepy thrift stores to hit up.

Weekly Work It Out

I'm loving the extra hour of daylight in the afternoons - in fact I love it so much that I haven't been doing my workout DVDs.  Whoops!  We've taken the dogs for a walk everyday since the time change.  We try to make them run at least a little bit, but Rosa is a fatty and doesn't like it.

I'm planning on getting these done this week....

I was planning on doing this last week but the weather was too nice.  I will get this done!

I'm also planning on doing this one this week...

Based on the reviews on NetFlix this is apparently a big butt kicker.  There are 3 half hour workouts that apparently will make you feel dead at the end - my favorite (no really!).  I'm excited to give these a try.  I've done a few Shape workouts before and really liked them.

Menu Monday

It's time to see what we're eating this week.  I apoligize in adavance - it's pretty boring.  We're trying to eat up all the food in the pantry and freezer so there's some boring things going on.

I love sweet potatoes and they were on sale this week!  I haven't used my Crock Pot in a while so I'm excited to finally use it again.  I'm not planning on making the greens just the chicken and potatoes.


This is technically a recipe for chicken broccoli alfredo, but ours will just be broccoli.  I'm planning on using up all of the remaining chicken on Monday.  I've got a ton of spaghetti and I need to use it!

Wed: Jalapeno and Jack Grilled Cheese with Tomato Soup

The jalapeno popper grilled cheeses last week were a big hit so we're trying something similar this week.  Tomato soup was also on sale so I got a can to go with this.  I can eat soup any time of year.

Thurs: Leftover soup from the freezer

We still have random soup and pasta in the freezer that we have to eat in the next 2 weeks.  KB wasn't a huge fan of this soup the first time around, but it's gotta get eaten!

Bonus Recipe:  Oreo Pudding Poke Cake

I made this last night for dinner at my parents house and it was amazing.  KB ate a big piece for breakfast this morning it was so good.  If you like oreos you'll like this.

Who Knew

The Lovely Jenny tagged me in a fun getting to know you game.  So here's some stuff you probably didn't know about me....

1. What is YOUR #1 goal for the next year?
Our current and biggest goal for the next year is to buy a house.  If you've read this blog at all recently you know we're in the process.  We got some bad news yesterday that the bank is dragging their feet and we probably won't be able to close for at least a couple of weeks later than we originally thought, but we're hoping the sellers are lenient with us.  Pppplleeasseeee.


2. What's your biggest fear in life (Something as simple as a reptile to something you fear about life in general.)
My biggest fear is growing up and not realizing it.  I always imagined myself having a really fulfilling life and job when I was a grown up.  I don't think I'm a grown up yet.  I'm not sure when I feel that I will be grown up, but I'm afraid that when it hits me I won't be where I thought I would.  My job is fun and it pays me, but I don't necessarily feel really fulfilled.  I love KB and our dogs but lots of times my life is really really boring.  I just want to do something bigger with my life and I don't want it to be too late for me to do so and not even realize it.

3. What is something you wish people knew about you, that they may not see or know when first getting to know you?
I'm really nice - I swear.  I put off a big "don't talk to me I hate you" vibe to people that I don't know.  Lots of people think I'm a snob or a bitch.  I'm just not a really overtly friendly person.  If I don't have anything to say to you - I won't.  It's not because I hate you, it's just because if I have to make up something to talk to you about then I probably just shouldn't talk at all.  Once you get to know me I'm really nice, but sometimes it just takes a while to get to that point.

4. What does your MOST favorite breakfast consist of??!
I hate syrup (HATE IT) and anything that it goes on (besides waffles) so no pancakes or french toast for me.  They are gross.  I really like eggs over easy with biscuits, honey and bacon.  I also really like egg sandwiches with cheese (but not egg mcmuffins).  I pretty much love all breakfast foods except the syrupy ones.

5. What's your favorite workout?
I like workouts that I know I've done something.  I want to sweat and pant and feel like I'm going to die by the end.  That way I know it's working and it's worth it.  I really like to do kickboxing and hard core step aerobics.  I also like to combine these with lower impact stuff sometimes like pilates and yoga, but for workouts - the harder the better.

6. Have you ever been skydiving? If not, why?
I've never been and I don't really want to.  I'm not a huge fan of heights and I get motion sickness really bad really easily.  I would probably puke mid air.  Not pretty.

7. What did you do growing up that got you into trouble?
I did lots of things growing up to get in trouble.  Most of them consisted of physician violence.  I was a pretty mean little kid.  I slammed my sister's leg in the car door, stomped on my sisters femur while she was sitting down, threw stuff at them, etc.

8. What story does a member of your family ALWAYS like to tell you (and everyone else) about??
I have lots of stories about me that get told a lot.  Probably the most common is when I was sent to my room for punishment (shocker) and I climbed out the window to escape.  I played outside for a while and then when I thought someone might come to check on me I tried to get back in the window.  I couldn't quite reach it and was locked outside.  I decided to just walk in the front door like nothing had happened and hope no one noticed.  They noticed....

9. What was the last TV, movie or book that made you cry or feel real emotions for?
Yesterday was a pretty sucky day dealing with the bank and all.  When I got home a friend sent me this....





I broke down.  I know there's been a lot of hate about Invisible Children and the main guy is a little creepy, but anything that raises awareness for the atrocities happening in Africa is good in my book.


10. What is your favorite time of the year and why (spring, fall, wedding season, birthdays?)
I really like summer.  The beach, the weather, the flowers, the long days.  I love it all.  It normally doesn't get too terribly hot where we live so it's not that bad. I'm normally pretty cold so I'm not warm unless it's over 85 outside.

11. Favorite song at the moment?
I've been loving anything from David Guetta.  He's my listen at work go-to.  Everything is so upbeat and peppy. Even though he doesn't technically sing anything it's still all good in my book.

Menu Monday

Here's what we'll be eating this week...

Mon: Pasta and Beans


This looks simple and really delicious. I'll be using macaroni pasta since my podunk grocery store doesn't carry tubetti like the recipe calls for. I've never even heard of tubetti.

Tues: Black Beans and Rice


I thought about doing this in the crock pot, but while packing up our kitchen I found my Le Creuset and wanted to use it before it got packed. This looks pretty simple and delicious. I'm trying to cook less meat so I won't have to buy it and store it during the whole moving thing.

Wed: Beef and Bean Crescent Burritos


I'm still trying to use up the crescent rolls. I will be making this using just beans and no beef. I'm hoping KB won't notice that I didn't plan any meals using meat this week.

Thurs: Jalapeno Popper Grilled Cheese


I'm so excited about this meal that I might make it 2 times this week and not make one of the more boring ones. I love jalapeno poppers and I love grilled cheese. This one has jack and cream cheese along with jalapenos. I want one right now.

Weekly Work It Out

It's still hectic here since we only have 2 weeks until we close on our house, so besides getting a workout from packing and lifting all of our stuff, here's what workouts I'll be doing this week....

I like Chris Freytag because she does hard workouts.  Normally I end up really sore and sweaty by the end and if I'm going to work out I want it to be worth my time.  I've done similar lower body workouts from her before and they were really good.

I'll also be doing this one.  I really don't like Jillian Michaels as a person, but she's a pretty good trainer.  I normally do the workouts with her on mute.  The reviews say that this is pretty easy, but it's an hour long so hopefully quantity will make up for quality.

I'm also excited that it's daylight savings time and that I can take the dogs for a walk when I get home from work.  They need their exercise as much as I do.

Thoughts on a Thursday

It's time for my random Thoughts on a Thursday....


  • Most of my thoughts are centering around our slackass loan officer.  Seriously - don't even try to do business with BB&T.  Everyone tells me that she'll pull it out in the end, but if we don't close by the end of March our sellers have almost told us that the deal is off.  We're scheduled to close by the 26th, but everyone seems to think it will come down to the wire and will probably get pushed to even later than the end of March.  She never returns a phone call or an email.  our insurance company has been waiting on her to fax 1 sheet of paper for almost 5 days.  She better get her ass in gear.  Has anybody else had these issues?  HELP!  This is seriously all that I'm thinking about these days.
  • I picked up some goodies at Ulta yesterday.  I finally used my birthday gift card from my sister and got these...



Ever used any of these?  The shampoo was on clearance for $3 so I don't have high hopes for it.

  • I keep seeing all these cute bathing suits on Pinterest and I want to go somewhere tropical.  We're going to the beach with my family this year, but don't have any tropical vacations planned.  I'm not going anywhere that you might even need a bathing suit until the middle of July.  Gross.

Seriously - get on my body and take me somewhere warm and sunny.
