Menu Monday

Here's what we'll be eating this week...

Mon: Chicken Pesto Sandwich


I love pesto and I also love chicken salad. There's no way this can go wrong....except if the store doesn't have pesto......and all that basil that you froze looks nasty now. I'm thinking this is going to turn into regular chicken salad (which is still delicious).

Tues: Spaghetti Squash Lasagna


This could be an epic fail as well. The grocery store didn't have spaghetti squash either (I really need to start paying attention to these things) so this will be regular lasagna. Luckily I had half of a box of regular lasagna noodles hanging around in the pantry.

Wed: Easy Mexican Style Bake


This is one of the few things this week that I actually have all of the ingredients for. I've made something similar in the past and it was okay - pretty much just a regular casserole. I'm planning on spicing this one up a lot with lots of hot sauce and chili powder.

Thurs: Curried Broccoli and Cous Cous


I'm most excited about this one. I really like cooked broccoli (where it's still slightly crispy) and I also really like curry. I couldn't find chick peas in the grocery store, so I'll be substituting black beans. I hope it works.

Bonus Time!

The weather was gross here yesterday (and will be for the next few days) so I made some deer chili (no recipe just threw stuff together) last night. I also wanted to make some cookies to eat with my hot chocolate. I didn't have any chocolate chips, so oatmeal raisin was the next best thing.

  1. mike and i went together to the grocery store yesterday since it was bad weather here and boring...and we spent just over $200! breaking a grocery store record.

    anyway, i get home all prepared to make chicken tortilla soup...and i didn't have 2 ingredients. dammit! i decided just to wait and make it later. instead i fixed an asian chopped salad. definitely not rainy gameday food but oh well. so i'm hoping to make tortilla soup later this week. tonight i'm fixing fried porkchops with homemade mac & cheese and applesauce. yum!

  2. YUM. How funny that the previous poster said the same thing, but I made chicken tortilla soup last night! It was amazing. It's definitely soup weather around here and it sounds like everyone's in on the action.

    I actually just bought some pesto, so I may have to take a look at that delicious chicken sandwich.
