Menu Monday

Here's what we'll be eating this week.  Link up with Rachel to play along.

Mon:  Scrambled Egg Tacos


To some people this sounds weird (I'm looking at you KB), but to me it sounds really delicious. I'm going to make some maple sausage to go along with it. I'm not a huge fan of maple syrup, but I like maple sausage. It's going to be even better with some salsa and avocado on it.

Tues: Sweet Potato Veggie Burger


I thought about making this a while back, but was too lazy to cook the sweet potato when I got home from work. Luckily I saw in my slow cooker cookbook that you can bake sweet potatoes in your slow cooker. This recipe only needs one roasted sweet potato, so I'm going to see how it goes cooking just one in a whole crock pot.

Wed: Crispy Cheddar Chicken and Peas


I really like Cheez-Its. They are so crispy and cheesy and delicious. This is like chicken covered in Cheez-Its. It's actually Ritz crackers and cheddar cheese, but I have a feeling it will taste like a Cheez-It (it better!).

Thurs: Spicy Pop Pulled Pork


This is actually a cheat meal. I made this recipe last weekend while we were painting. It was pretty spicy for my bland family, so no one really ate it. Luckily we have tons in the freezer, so that's what we'll be eating this week. It is really spicy, but it's also pretty good. I'm not a huge Pioneer Woman fan but this is pretty good.

  1. I was just at a brunch over the weekend and the girl made scrambled egg tacos and they were amazing. I want to have them everyday now lol. xo

  3. I make breakfast burritos similar to your egg tacos. For dinner though because I love breakfast for dinner. And I usually triple them and then wrap them up and freeze them. When you need a quick meal or snack, just microwave for a minute under a slightly damn paper towel. Honestly they are really yummy. I wouldn't freeze the avacado but extra meats and salsa all freeze fine in there with the eggs.

  4. All of this looks so yummy! Being gluten and dairy free, I'm used to getting creative with dishes, so these look fabulous to me!
