Menu Monday

It's another Menu Monday post - link up with Rachel to play along.




Here's what we'll be eating this week...

Mon: Pasta and Beans


This looks simple and really delicious. I'll be using macaroni pasta since my podunk grocery store doesn't carry tubetti like the recipe calls for. I've never even heard of tubetti.

Tues: Black Beans and Rice


I thought about doing this in the crock pot, but while packing up our kitchen I found my Le Creuset and wanted to use it before it got packed. This looks pretty simple and delicious. I'm trying to cook less meat so I won't have to buy it and store it during the whole moving thing.

Wed: Beef and Bean Crescent Burritos


I'm still trying to use up the crescent rolls. I will be making this using just beans and no beef. I'm hoping KB won't notice that I didn't plan any meals using meat this week.

Thurs: Jalapeno Popper Grilled Cheese


I'm so excited about this meal that I might make it 2 times this week and not make one of the more boring ones. I love jalapeno poppers and I love grilled cheese. This one has jack and cream cheese along with jalapenos. I want one right now.

Weekly Work It Out

It's still hectic here since we only have 2 weeks until we close on our house, so besides getting a workout from packing and lifting all of our stuff, here's what workouts I'll be doing this week....

I like Chris Freytag because she does hard workouts.  Normally I end up really sore and sweaty by the end and if I'm going to work out I want it to be worth my time.  I've done similar lower body workouts from her before and they were really good.

I'll also be doing this one.  I really don't like Jillian Michaels as a person, but she's a pretty good trainer.  I normally do the workouts with her on mute.  The reviews say that this is pretty easy, but it's an hour long so hopefully quantity will make up for quality.

I'm also excited that it's daylight savings time and that I can take the dogs for a walk when I get home from work.  They need their exercise as much as I do.

Thoughts on a Thursday

It's time for my random Thoughts on a Thursday....


  • Most of my thoughts are centering around our slackass loan officer.  Seriously - don't even try to do business with BB&T.  Everyone tells me that she'll pull it out in the end, but if we don't close by the end of March our sellers have almost told us that the deal is off.  We're scheduled to close by the 26th, but everyone seems to think it will come down to the wire and will probably get pushed to even later than the end of March.  She never returns a phone call or an email.  our insurance company has been waiting on her to fax 1 sheet of paper for almost 5 days.  She better get her ass in gear.  Has anybody else had these issues?  HELP!  This is seriously all that I'm thinking about these days.
  • I picked up some goodies at Ulta yesterday.  I finally used my birthday gift card from my sister and got these...



Ever used any of these?  The shampoo was on clearance for $3 so I don't have high hopes for it.

  • I keep seeing all these cute bathing suits on Pinterest and I want to go somewhere tropical.  We're going to the beach with my family this year, but don't have any tropical vacations planned.  I'm not going anywhere that you might even need a bathing suit until the middle of July.  Gross.

Seriously - get on my body and take me somewhere warm and sunny.

Bookshelf

Here's a quick update of what I've been reading recently...

I finally got on the bandwagon and read this book.  I really liked it even though I felt like it didn't have much of a plot after the first few chapters.  I could have read a few hundred more pages about Aunt Tootie's crazy nice house in Savannah.  Oletta also reminded me of my grandmother a lot.

This book was a super easy read and didn't have much substance (but sometimes that's okay).  Basically it's about a teenage girl dealing with her parents divorce, moving around a lot and somehow falling in love along the way.   I read it in about a day.  I'm glad I didn't spend any more time than that on it.

This book was okay, but was a little long and got boring towards the end.  A young professional woman breaks up with her boyfriend who is a writer.  He writes some bad stuff about her in a magazine and about 100 pages later she ends up pregnant.  I really thought it would be better than that, but it wasn't.

This book made me really glad that I don't have any food allergies.  This is the true story of a lady that is allergic to pretty much everything and how she deals with it.  I really had no idea that cantaloupe could make someone's throat swell up so much that they almost die.

Menu Monday

Here's what the Browns will be eating this week:

Mon: Chicken Alfredo Biscuit Casserole




I'm trying to use up some of the stuff that we have laying around before we move. At some point I stocked up on crescent rolls and Grands rolls. I'm not sure when I ever thought buying 10 cans of them was a good idea. This looks simple and will use up at least one roll of biscuits.

Tues: Southwest Black Bean Casserole


This looks amazing to me. I won't be adding in the ground turkey and instead will be subbing in another can of beans. It looks so cheesy and mexicany and delicious.

Wed: Detox Salad


The whole reason this salad is supposed to detoxify is because of all of the cruciferous vegetables. Luckily for me I love cruciferous vegetables (like broccoli and cauliflower). I think this will be really good and refreshing. I won't be using raisins because they are nasty, but dried cranberries. I'm thinking this will be sort of like slaw but with more flavor.

Thurs: Something from the freezer

We still have tons of pinto beans, stews and soups in our freezer that we have to eat in the next few weeks. We'll be having a hodge podge for dinner.

Weekly Work It Out

I'm doing a bit of reorganizing - Menu Sundays will now be on Mondays, so Sundays will now be my workout posts.

Here's what I'll be doing this week....

Leslie Sansone is pretty crazy and always talks about weird things, but I normally feel like I get a pretty good cardio workout from her DVDs.  They are normally kind of easy, but I always can tell that I've done something so they are good for recovery.

I also have this coming this week.  It's 4 miles in total and takes about an hour, but they go by pretty quickly.  The reviews on Netflix say it's pretty easy and kind of a waste of time, but I'm going to try it anyway.

Yesterday I did this DVD and I thought I was going to die.  It's not normal yoga it's like "I want to kill you yoga".  I feel like I got a really good workout and can hardly move today, but it just wasn't what I was expecting.

I also did this without sound because she annoys me to no end.

What will you be working out to this week?
