Menu Monday

Menu Sunday will now be moving to Menu Mondays so I can link up with a fellow Rachel.

Here's what we'll be eating this week:








Mon:  Chicken Enchilada Pasta







This looks amazing  - I can't wait to try it.  I love all things pasta and all things Mexican food.  There's no way this can be bad.


Tues: Slow Cooker Hot and Sour Soup


We're eating tofu in this dish.  KB saw the tofu yesterday and just gave me a look.  He really likes hot and sour soup though so I'm hoping I can change his mind.

Wed: Dinner out for KB's birthday

We're still eating for KB's bday.  We're going with some of his extended family that weren't included in this weekend's festivities.

Thurs: Twice Baked Cauliflower


This looks really good, but a little time consuming. I may give up on Thursday and just eat frozen pizza. We'll see how the week goes...

Weekly Work It Out

I'm still working out....somewhat.  We're making major headway on the house hunt and actually put an offer in on a house today.  Hopefully I'll have a bit less crazy schedule this week and can actually get some decent workouts in.

This week I'll be doing these:

A friend gave me this DVD to try and I'm pretty excited about it.  I really like resistance bands and Leslie Sansone.  She's a little crazy and sometimes you feel like an old person doing all the walking workouts.  Every time I've done her DVDs though I feel like I got a pretty good workout in without feeling nasty afterwards.

I never got to this last week, so I'll be doing this sometime this week.  I hate the way Jillian's voice sounds so I'll probably do it with music only.  I normally miss a few of the first moves when I do that, but it's better than having to listen to how annoying and know-it-all-y she is.

Menu Sunday

It's another pretty boring week of eating for the Browns.  We're right in the middle of negotiating our future (hopefully) home, so things have been and will continue to be at least for the next few weeks a bit dicey.

Monday: Asian Pasta Salad



I've been meaning to make this for 2 weeks now, but with all the craziness it just never get done.  I WILL make this recipe this week.

Tuesday: Slow Cooker Lentil Soup



This is another repeat recipe.  I meant to make this last week but it just never happened.  KB is not a huge lentil fan, but I think this will taste really good.

Wednesday: Pepperoni Pizza Bake




I have some leftover pizza sauce and pepperonis from when I made pizzas a few weeks ago, so I wanted to use them up with this recipe.  I've also amassed a lot of refrigerated biscuit dough.  Hopefully this will help me out.

Thursday: Avocado Chicken Salad



I love chicken salad and I love avocados.  There's no way this can be a bad meal!  I made crock pot chicken casserole a while ago and was really pleased with the results.  I'm planning on cooking the chicken breasts in the crock pot and then making them into chicken salad.

Bonus Recipes!

KB's friend was here this weekend so I tried out a new deer recipe.  I based it on this recipe and it turned out really well!  I used deer steaks and cooked them all day.  I served it over some rice pilaf.  The guys really liked it and said it was some of the best deer they'd ever had.

Thoughts on a Thursday

I'm thinking about these things on this Thursday....

-We're looking at a few more houses this afternoon and have one really promising showing lined up.  If we like it we might make an offer..eeeekkkk.  I'm a little worried we won't like it, but if we do I will be so happy that we're done looking.  I'm ready to have a life back!

-I made this for dinner last night and it was amazing.  KB wasn't too big of a fan, but I thought it was really good.  If you like asparagus than you'll love it.



- One of KB's frat brothers is coming into town this weekend and I'm excited to make something fun.  I may make this, but with deer.



- I stocked up on some really cheap gingerbread cookie dough that I had a coupon for (extreme couponer moment).  Any ideas?  I'd like to use at least one roll to do something fun with and not just make cookies.

- I've finally gotten caught on my Teen Mom.  These people are crazy.  I'm starting to not even like it anymore because Janelle needs to get over herself, Kailyn just needs to get back with Jo already, Chelsea needs to leave Adam in the dust and Leah needs to stop cheating on people.

- I won a really cool giveaway from Kim and The Shabby Apple.  Show these ladies some love.

Weekly Work It Out

House hunting is consuming my life and I'm not working out nearly as much as I should.

This week I'm planning on finishing up a few of my Wii workout games and getting in some workout DVDs.  I'll be getting this workout this week:

I'm not a huge Jillian Michaels fan, but I normally feel like I get a pretty good workout when I do her DVDs.  I can't stand her voice or her attitude, so I normally do them without any sound.I'm also planning on doing more walking outside. It's finally starting to be daylight by the time we get home from work, so I'm definitely planning on taking the puppies out for some walks this week.

Menu Sunday

Whew it's been a whirlwind of a week and will be this week to with house hunting in full swing, therefore we'll be eating some weird random things this week...

Mon: Hot dogs and chips
            This is wife of the year material here.  Hot dogs on Valentine's day.

Tues: Asian pasta salad from last week
        We ended up eating Thai food with KB's aunt for dinner one night last week so I didn't make this, but I still have all the stuff.

Wed: Asparagus, Goat Cheese and Lemon Pasta


I had a coupon for goat cheese and asparagus was on sale this week - this meal was meant to be!  I've had this pinned for a while, but never had all of the stuff to make it.  I'm pretty sure KB won't be a fan, but I will be!

Thurs: Slow Cooker Lentil Soup


We have a full afternoon of house showings on Thursday after work, so hopefully this will still be delicious even if it stays in the crock pot for a while.  We really like lentils even though they can get a bit mushy after they cook for a while.  I'm thinking this will be a winner.

Updates

I feel like all I've really posted on the last few weeks are link ups, so here's a little update about what's going on.

-The joys of home ownership just got worse.  Our landlord called us last week and told us that he is putting our house on the market.  We've got to get moving.....now.  That being said, we're expanding our home search to a few areas we haven't looked before in hopes of finding something good.  We're going to look at a few more houses this week so hopefully we can decide on something soon.  In some ways it's comforting to have a time line since I'm afraid KB would just keep looking until forever and not find anything, but in other ways it scares the bejesus out of me to know that we might not have a place to stay.  Scary.

-Since we're going to be moving out of our current home sooner than planned we're doing a lot of clean up so it's not a master clean when we finally move out.  Our bathroom is designed really terribly.  There are no vents and no windows, so the steam from the shower has nowhere to go.  We have a terrible mildew problem in there because our landlord is really dumb and not the best house flipper.  I've tried to use all the natural products I can find and nothing was making the mildew go away.  Finally I broke down and tried this stuff....

It's definitely not natural, but it definitely works.  I didn't even have to scrub and everything came right off.  I would suggest wearing gloves and a mask.  I found out the hard way when I breathed in a bunch of it and thought I was going to die.

- I finally used up all of my old face wash and got around to using my new Kiehl's ones and I love them.  I have the rare earth cleanser and the cucumber toner and they are both great.  The cleanser has a slight exfoliator but not too much and it leaves my skin super clean and soft.  The toner is also really good for making my skin soft and moisturized.  So far I'm only using really tiny amounts because they were expensive.  At the rate I'm going I can probably make them last a year or more.

Buy this now.

-I've been trying to keep up my reading recently and have read a couple of okay books.

This book was kinda boring and predictable.  The "oh poor pitiful me, I'm fat and the world just doesn't understand" schtick got a bit old towards the end.

This book was pretty good.  It's all about food allergies and how this lady copes with them.  I don't have any food allergies and I don't know anybody with really serious ones so it was kind of interesting to learn about them.  It makes me really glad I don't have to look at everything I eat and wonder if it will kill me or not.

-I had a dentist appointment yesterday so I took the whole day off and just laid around.  Work has been super stressful recently and it seems like nothing goes right.  I've definitely had a few days where I got so angry that my face was purple.  A good day off with nothing to do and clean teeth should hopefully help things.  I spent yesterday working out, cooking, cleaning and getting my teeth done.  I love going to the dentist.  Fresh clean teeth is one of the best feelings in the world.

Weekly Work It Out

I'm still working out fairly regularly, but I definitely slacked off last week and only worked out 5 days.  Overall the 10 Minute Solutions DVDs I tried were really good.  They also used resistance bands.  I got some for Christmas in my stocking and I wasn't really sure what to do with them, so this gave me some really good ideas. I'm still working out with my Wii games and the Netflix instant queue workouts, but this week I'll also be getting these...

The reviews on Netflix are half and half for this one so I'm not really sure what to expect.  It seems like the Firm always have some sort of weird equipment that you have to buy and use.  This one calls for the "Fanny Lifter" and the "Sculpting Stick" (sounds dirty), but I'm pretty sure I can get away with just using a step and some dumbbells.

I'm also getting this towards the end of the week.  The Firm instructors always creep me out a little bit, but I always feel like I'm on the verge of death at the end, so that's a good thing.  Hopefully this can make up for me being a slacker last week.

Menu Sunday

Here's what the Browns will be eating this week.  This is definitely not one of our healthiest menus, but whatever.

Mon: Pizza
       I have amassed a large amount of Pillsbury pizza dough that I have to do something with.  I have a dentist appointment on Monday too so I won't really be home in time to cook since my dentist is almost 2 hours away (it's a long story).  This is easy and I won't have to think about it.

Tues:  Slow Cooker Garlicky Onions, Sausage and Peppers


I normally try not to repeat recipes and always cook something different, but Italian sausages were majorly on sale and I had a coupon, so in the interest of saving money I am.  I'm pretty sure KB won't notice and he liked it the last time we had it.

Wed: Ham and Swiss Hand Pies


I have also amassed a large amount of Grands biscuits that I always seem to forget about.  I love all sorts of melty, pockety sandwiches so I'm excited about these.  It's like a really good Hot Pocket.  I was just thinking about Hot Pockets the other day.  They were the bomb.  I'm not sure why I stopped eating them.....maybe all the trans fats and hydrogenated oils.

Thurs: Asian Pasta Salad


I love cold noodle salads and this one looks delish.  KB will probably add in some tuna or chicken, but I'll probably eat it as is.  My green onions that I was growing in my kitchen got some sort of root rot so I had to throw them out, but I got a fresh bunch on sale at the store and I plan on starting up the growing again.

Bonus Recipe: Fruit Kebabs

So you don't really need a recipe for these because they are super simple.  I'm going to be making these for our Super Bowl party tonight.  KB's mom always throws a huge Super Bowl party and there is always so much food that desserts never really get eaten.  I think these will be light enough that hopefully someone will eat them (I know I'm going to eat at least one!).  Mine will have strawberries, mangoes, cantaloupe, watermelon, honeydew melon and bananas.  I'm thinking about possibly making some fruit dip too but I'm not sure.
